Chef Paulo Airaudo, the culinary maestro who has earned six Michelin stars across his 14 restaurants worldwide, including Amelia, Aleia, and Ibai in Spain and Noi in Hong Kong, has now introduced his unique style of epicurean artistry to Southeast Asia for the first time. Located on the 56th floor of ‘EA’ Rooftop at The Empire, this chic and sophisticated restaurant will introduce a new era of world-class Italian cuisine to the heart of Thailand’s vibrant capital city.

These sartorial elements are complemented with other creative splashes, such as an original hand-painted entrance wall and a floor mosaic influenced by the majestic Florence Cathedral. Luxurious golds, deep browns, and tranquil blues create a sophisticated yet welcoming ambiance, setting the stage for every occasion, including business lunches or intimate dinners. Within this atmospheric setting, Chef Paulo showcases his bold and innovative approach to Italian cuisine. The concept blends the timeless elegance of Florentine heritage, drawing inspiration from the historic heart of Tuscany and focusing on fresh fish and seafood. The finest seasonal ingredients, carefully sourced from local Thai and Japanese producers, are used to craft tantalizing tasting menus that marry classic Italian recipes with unexpected twists. Signature dishes include duck cappelletti with butter and thyme, and pasta alla chitarra with gamberi di mazara and sour butter, and an open fire is used to chargrill premium meats and seafood in the time-honored Italian style.
